Ahhh, rhubarb season. A crop that creates community here in Minnesota. Especially for those who love to bake. When our hemisphere begins to tilt toward the warm spring sun, rhubarb plants begin to explode. And around here, sharing the seasonal delight with friends, family, and those you’ve never met on a Facebook bulletin board post searching for a few bundles to bake a pie, is its own love language. A springtime rite of passage, really.
Last spring, my husband and I delivered a fresh strawberry rhubarb pie to our snowbird neighbors upon their return… only to be gifted an entire rhubarb plant from their travels. Talk about a gift that keeps on giving!
Its tart, juicy stalks are perfectly made for a pairing of flour, butter, and, of course, some sugar. And these Strawberry Rhubarb Bars are one of my favorite sweet ways to use this tart vegetable. Yes, it’s a vegetable. (Your kids won’t have a clue — but they should!)
